Only one week ago I decided to invite you all to join me as I challenged myself to more greens for 5 days.  You responded with a yes!  Thank you for sharing your pics, your recipes, your thoughts.

I strive to keep my way of living and eating simple. The healing process and the journey need not be complicated.

On day one I asked you to get creative with your greens.  Where you able to play with your green smoothies and come up with GREEN greatness?

One day two we mixed our greens into salads.  So many choices.  I loved the recipes you shared.

On day three we made soup.  Kale Broccoli Soup. I received a few emails from you so delighted by it’s taste.

Then on day four we steamed our greens.  These greens are my favorite served with a little olive oil, honey and lemon.  Mmm.

It’s day 5! The challenge is over but not until you try a little piece of mother natures sweet stuff.  Here is a twist on a lovely green fruit salad I’ve been making for years!

Fresh Fruit Salad

1 pear, diced
1 green apple, diced
2 kiwi, pealed and diced
1 handful of parsley, chopped
1 baby cucumber, diced
4-5 organic strawberries, diced
1/2 banana, diced (optional)

Place all fruit in a bowl.

For the dressing

1/4 cup of water
2 Tbsp lime juice
1 Tbsp sweetner, honey, maple syrup or a pinch of stevia

Pour the dressing over the salad and mix gently. Allow the salad to marinate for one half hour.

Here is recipe that is ridiculously simple.

I’ve receive lots of personal emails asking what to do with all the glowing greens. There is a fear that the greens will waste or wilt away. Revive your greens with water. Like a bouquet of flowers cut the stems (if applicable) and submerge them in cold water for up to 8 hours. Drain.  That’s it!

Let’s use up those extra greens. Shall we?

Have a peak at what’s left in your fridge. Is it parsley? I have a pretty use for it tomorrow. What about left over kale, asparagus, collards, spinach? Let’s steam ‘em!

Simple Steamed Greens

1 bunch kale or other greens
1 zucchini, large chunks
Broccoli or asparagus

Steam all for 4-5 minutes. Serve with a drizzle of olive oil and sprinkled sea salt.

Other options include:

oil, balsamic and maple syrup drizzled over
sauteed mushrooms and onions served over top
serve along side of your morning eggs. That’s my way!

Are you noticing the abundance of Green in your life? How do you feel?

When you feel great you naturally want to share your experience with everyone around you. Think about sharing your greens. Yesturday I made a smoothie of parsley, pineapple, blueberry and almond milk. It was heavenly. I had to share. I just wanted someone to taste it and share in my delight. Who came walking in the door but my hubby. I couldn’t wait to make one for him.

Let’s share our greens.

I’ve seen many green smoothie recommendations on our event page. Such a simple method for adding in more greens.

Today we turn to delicious green soups.

There are so many ways to green up your soup. It was hard for me to decide but I chose the simple one of course. If you have a little kale and lots of broccoli you’ll love this glowing green soup.

Broccoli and Kale soup

2 broccoli heads and stalk
1 large potato
1 carrot
2 kale leaves
water or chicken broth
1 Tbsp Celtic sea salt & pepper
1 garlic, crushed

Chop all veggies in large chuncks. Add all ingredients into a soup pot. Add enough liquid so that it undercovers the vegetables by an inch or two. Simmer for 8-10 minutes. Allow the soup to cool slightly and then blend all ingredients.

note: I like to add the kale for the last minute of the simmering process.

Today I’m sharing a simple salad with you all.

I used to buy gourmet cookbooks. They were perfect for entertaining and for creating overwhelm, stress and fear in my life. Now I create my own using ingredients on hand using one simple instruction:

Make it with love.

The women I work with often need to hear that same message. In the spirit of simplicity allow yourself today to find simple ways to add in greens. So many of us are overwhelmed by the day to day tasks. A salad made of mixed greens sprinkled with parmasean cheese and a little dressing is simply tasty.

The first time I enjoyed a salad this year was over Easter weekend. Yes! Salads are cooling and till now were completely out of season in my region. Eating them meant a combination of colds and ill health in my body. If you feel cold even in the warmth try omitting salads in the winter season.

We love salads in our home. Made simple and always fresh. The dressing, well, it has to be fresh and taste great!

Green Olive and Asparagus Salad

1 bunch asparagus, cut in 2″ pieces
1 head of lettuce, any kind
1 tomato sliced small
1 red pepper, chopped
12 Green olives or black will do
1/4 cup pine nuts or soaked sunflower seeds

For the dressing

1/4 lemon or lime, squeezed
1 Tbsp olive oil
1 tsp mustard, powder
2 Tbsp balsamic vinegar
S & P

Steam the asparagus pieces for 8 minutes. Rinse under cold running water to stop them from cookingfurther.

Arrange the lettuce on a platter, asparagus in the middle and the other veggies around the outside for a nice presentation. Sprinkle seeds over top.

Place all dressing ingredients in a screw-top jar and shake well. Drizzle over salad. For added deliciousness we like to add feta and capers.

For a week I peddled back and forth trying to decide if I should launch a 5 Day Green Challenge. It was late notice.  I do lot of things late. Then late on Friday, 3 days ago, I launched it.  I dreamed of 100 of us going for the green. Guess what?  The universe responded.

We are over 100 strong bodies gearing up for green goodness.

Allow yourself this week to notice how you feel endulging in green smoothies in the morning. Notice how you feel mid day. Notice your energy.

There is no right way to do this.

Smoothies are one thing.  Green smoothies are another.  I feel a little more gorgeous drinking greens. My simple suggestion is to first choose your green then add your fruit and liquid.  My favorite green smoothie is in fact purple but I wanted to embrace the color of green to kick off this week. If you like a light green color think light colors.

choose one or two of mango, banana, pineapple, kiwi, pear, milk- almond, coconut ect. and one dark green.

If you like dark smoothies think darker colors.

blueberry, strawberry, red apple and 2 dark greens.

Choose your blender.

You’ll want to invest in a quality blender to make really good smoothies.  If you are on a budget, I recommend starting with The Magic Bullet.  The Magic Bullet is great for single serving smoothies.  It has a high powered motor with strong blades that liquifies food to a good degree.

If you have a problem with textures you will need to invest in a Vitamix or Blendtec. You’ll find no chunks or food pieces when your smoothies are made in these.

Please note.

If you have low thyroid function go ahead and steam your kale, collard or spinach for 1-2 minutes.  Then rinse it under cold water and continue to add it to your smoothie.  By slightly steaming these cruciferous veggies you remove the goitrogen properties that can potentially inhibit thyroid function. Pineapple Kale Delight

1 cup coconut milk
1 kale leaf, slightly steamed
1 handful parsley, chopped
1/2 green apple
pineapple or banana
Blend away baby!!

Bonus Ingrediens: I add 1 tsp of dulse into my smoothies.

The idea of eating green isn’t new. In fact, our ancestors thrived on it.  At least mine did. On mutton, rabbit, haddock and a whole lot of kale!  It’s no wonder I love this GREEN super-food.

Two years ago I started small cleansing groups in my home with a focus on helping women with low energy. Those cleanses spiralled into my virtual world and in January we rocked the house with 63 women in my Renew Your Energy Cleanse.  Some of you where part of it!

We aren’t cleansing this weak.

We are filling up on greens and just maybe in the process we’ll crowd out the nasty stuff consuming our life.  Uh hum, cookies and bad habits!

Here is what a Day Gone Green looks like for me.

Upon Rising: a glass of chlorophyll water and/or Matcha green tea
Breakfast: steamed greens and eggs. A green smoothie or green juice.
Snack: avocado on almond butter and crackers
Lunch: Green soup. oh yes! Broccoli, Asparagus and Pea soup. I’ll share one this week.
Snack: Green fruit salad, pumpkin seeds galore, a kiwi, green veggies
Dinner: Large green salad, a steamed green, fish and green pudding.  I made green pudding by mistake once and it was yummy!
Snack: green pear with kombucha green tea


Tip: Look for simple creative ways to include greens throughout your day. An addition of parsley to anything is refreshing and energizing!

My first encounter with abundant green food came in the form of a bottle called Barley Green.  That was 20 years ago!!  I would mix it with water or OJ.  The taste was awful so I’d swig it down with a glass of water.  I continued this torture because I felt amazing after consuming it.

Times have changed.

Now I look for ways to consume my greens in the form of whole foods.  I’m not talking about Cesar salad here either.  Have you tried a green smoothie with mango, pear and kale mixed in it?  If you haven’t you are in for a treat.

Keep this in mind, the darker the green the more abundant the nutrients, the higher the oxygen carrying chlorophyll and the more energized you’ll feel.  My favorite of all the green vegetable kingdom is kale.  I’m in love with it!  Dr. Furhman rates kale as the most nutrient dense of, well, all food!  On his rating scale of 0-1000, kale would be rated 1000.  You’ve gotta love that!

A word of caution.  I work closely with women who have adrenal fatigue and low thyroid function.  If you have either consider steaming slightly your cruciferous vegetable such as kale, collards, spinach and broccoli prior to juicing, blending or other uses.  These vegetables left unaltered have goitrogens that can inhibit thyroid function and your energy.  Enjoy these in abundance un-raw!

Preparing for the challenge.

If you are heading out to your local market to check out the seasonal greens you’ll want to make room for them when they arrive home.  Yep, take a minute or two to clean out the old items from your fridge.  Create a new space for all the new greens in your life this week.  Which brings me to my next point.

Greens are energizing!

Here are my favorite GREENS.  I’ll use these in the recipes I share this week. Choose them all or only one.  It’s your choice.

Kale
Parsley
Collards
Mixed greens
Broccoli
Asparagus
Green apples

Other green food: limes, kiwi, avocado, celery, green onion, collards, Brussels sprouts, leeks, artichokes, cucumber, lettuce.

I like to pair my greens with: pineapple, mango, blueberries, organic strawberries, hemp seeds in a smoothie. Mushroom and onion in sautes and soups. Eggs and other proteins. Carrots, beets, romaine in a juicer.  With honey, lime and oil as a salad dressing.

Allow yourself to be creative.

Children know how to be creative. If you were a child with a handful of greens and a bowl of fruit what would you create?  Be playful.  Have fun!

Create simplicity around your meals. Lighten the pathway to your stomach. Dream of a salad made from simple, fresh and natural ingredients. It’s that beautiful!

Nutritional Healing begins with simplicity. Going back to the basics that nature provides for us.  Slowing down enough to care.

1 organic red delicious apple, chopped
2 servings of organic swiss cheese, diced
2 large handfuls of arugula greens

2 tablespoons of balsamic vinegar
2 tablespoons of quality olive oil

Stir the vinegar and olive oil. Drizzle over mixed salad. Serves 2.

I find myself ungrateful for some pretty large items in my life. My aura is negative as I contemplate my dilemas and all the things I don’t have. I close my eyes to see a little pink heart glowing in my view. My eyes fill with tears. So I breathe. Deeply. I thank God for all the beautiful treasures around me. My family. My home. My desire to be more heartful. And then I let go a few more tears.

Ever have days like that?

As I walk into my home the answers come. I decide to change my ungratefullness into extreme gratitude. I will open my heart to gratitude now and intensily over the next three days.

No one likes to hear, “you never seem happy.”

If you want to move past old fear, doubts, habits then focus on gratitude. The past melts away. You may have to do this every day until it melts away. That my friends is creating daily ritual. It is a blessing.

Who do you appreciate having in your life over the past 12 months? Name ten things you love about your life. What are 5 of your favorite aromas? You get the drift. I created list after list about the joys in my life and all that I’m grateful for.

By day 3 I was feeling empty by all these wonderful things. I allowed that feeling to be present. I realized that there is a place for emptiness in my life. Soon I saw my emptiness being filled back up. It was with laughter, a few tickles from my son and then dancing.
