My first encounter with abundant green food came in the form of a bottle called Barley Green. That was 20 years ago!! I would mix it with water or OJ. The taste was awful so I’d swig it down with a glass of water. I continued this torture because I felt amazing after consuming it.
Times have changed.
Now I look for ways to consume my greens in the form of whole foods. I’m not talking about Cesar salad here either. Have you tried a green smoothie with mango, pear and kale mixed in it? If you haven’t you are in for a treat.
Keep this in mind, the darker the green the more abundant the nutrients, the higher the oxygen carrying chlorophyll and the more energized you’ll feel. My favorite of all the green vegetable kingdom is kale. I’m in love with it! Dr. Furhman rates kale as the most nutrient dense of, well, all food! On his rating scale of 0-1000, kale would be rated 1000. You’ve gotta love that!
A word of caution. I work closely with women who have adrenal fatigue and low thyroid function. If you have either consider steaming slightly your cruciferous vegetable such as kale, collards, spinach and broccoli prior to juicing, blending or other uses. These vegetables left unaltered have goitrogens that can inhibit thyroid function and your energy. Enjoy these in abundance un-raw!
Preparing for the challenge.
If you are heading out to your local market to check out the seasonal greens you’ll want to make room for them when they arrive home. Yep, take a minute or two to clean out the old items from your fridge. Create a new space for all the new greens in your life this week. Which brings me to my next point.

Greens are energizing!
Here are my favorite GREENS. I’ll use these in the recipes I share this week. Choose them all or only one. It’s your choice.
Kale
Parsley
Collards
Mixed greens
Broccoli
Asparagus
Green apples
Other green food: limes, kiwi, avocado, celery, green onion, collards, Brussels sprouts, leeks, artichokes, cucumber, lettuce.
I like to pair my greens with: pineapple, mango, blueberries, organic strawberries, hemp seeds in a smoothie. Mushroom and onion in sautes and soups. Eggs and other proteins. Carrots, beets, romaine in a juicer. With honey, lime and oil as a salad dressing.
Allow yourself to be creative.
Children know how to be creative. If you were a child with a handful of greens and a bowl of fruit what would you create? Be playful. Have fun!
