Only one week ago I decided to invite you all to join me as I challenged myself to more greens for 5 days. You responded with a yes! Thank you for sharing your pics, your recipes, your thoughts.

I strive to keep my way of living and eating simple. The healing process and the journey need not be complicated.
On day one I asked you to get creative with your greens. Where you able to play with your green smoothies and come up with GREEN greatness?
One day two we mixed our greens into salads. So many choices. I loved the recipes you shared.
On day three we made soup. Kale Broccoli Soup. I received a few emails from you so delighted by it’s taste.
Then on day four we steamed our greens. These greens are my favorite served with a little olive oil, honey and lemon. Mmm.
It’s day 5! The challenge is over but not until you try a little piece of mother natures sweet stuff. Here is a twist on a lovely green fruit salad I’ve been making for years!
Fresh Fruit Salad
1 pear, diced
1 green apple, diced
2 kiwi, pealed and diced
1 handful of parsley, chopped
1 baby cucumber, diced
4-5 organic strawberries, diced
1/2 banana, diced (optional)
Place all fruit in a bowl.
For the dressing
1/4 cup of water
2 Tbsp lime juice
1 Tbsp sweetner, honey, maple syrup or a pinch of stevia
Pour the dressing over the salad and mix gently. Allow the salad to marinate for one half hour.
